So, your brewery is turning 2 years old, what do you do? Well, throw a huge bash at the brewery apparently and invite everyone to come!

That’s just what the team at White Hag, from Ballymote in Sligo did this past weekend. They threw open their doors to their fans, friends, and family.

In this episode we have tasting of Little Fawn, the Session IPA by White Hag, and we listen to Wayne reminisce about a wild day and night in Sligo.

Brewmaster, Joe Kearns also provides us with an interview.

Always Sunny in Trim

Quite recently we celebrated our seven year wedding anniversary, and decided to visit the town we got married in, Trim! My original idea was to dine in the Knightsbrook Hotel, the venue of said wedding, until I engaged in some twitter activity with a nearby restaurant called StockHouse Restaurant. So on a rare sunny Sunday off we hopped on the short bus journey. We started our day off with a couple of drinks in Trim Castle Hotel. We both enjoyed a stunning pint of Rua, a red ale from local brewery Bru. This is the only craft beer option on draft, but you’ll also find bottles of their IPA Ri. 

The StockHouse Restaurant is right around the corner from the hotel so we really didn’t have too far to walk. Upon arrival I was thrilled we had a reservation as it was quite busy. After a very welcoming and friendly greeting from Tom, one of the owners, we were shown to to our table and handed menus and cocktail recommendations. I noticed on the drinks menu they pride themselves on their range of Gin. On the beer side we were delighted so see they support local with stocking a range of bottled beer from Bru Brewery along with Boyne Valley Cider


To get us started I chose “Cloudy Sky” made from Haymans sloe gin with Fentimans Ginger Beer while Wayne chose “Ten of Hearts” Tanqueray N0.10, Aperol & Rhubarb bitters. We enjoyed these very much as we looked over the menus. There was so much choice we both decided to go with the Early Bird Menu.

For starters no surprises in what Wayne picks, chicken wings. In his infamous words “I judge places on their chicken wings”. I don’t remember the last time he had something different. For me I chose the black pudding salad. We were both more than happy with our choices. Wayne actually uttered the words “best wings in Meath”. They were a decent sized portion with a generous dollop of blue cheese and garlic dip on the side. My black pudding was tossed with saute potato, bacon bits, lettuce leaves with a perfectly poached egg perched on top. Personally for me I would’ve preferred it without the potato. It was a beautiful dish and I couldn’t help myself stealing some of the blue cheese garlic dip to mix in.

For main course Wayne chose the striploin 8oz steak cooked medium and served with chunky chips and garlic butter on the side. While I decided on the confit duck leg served with herb stuffing, savoy cabbage, red onion and a spiced plum sauce. I chose garlic potato to accompany mine (good thing we’re married and both like garlic). Wayne devoured the steak and really enjoyed it. My duck was so tasty it fell off the bone. Both were thoroughly enjoyable dishes. Of course we had to have a beer, Wayne chose Bru Ri as I had Bru Rua. The beers were well suited to the dishes (perhaps something to use as a recommendation on the menu).

Needless to say we were both stuffed. When offered the dessert menu we politely declined. We took our time to finish our beers before ordering two espressos. During the course of our meal I found the staff very friendly and attentive without being intruding. It’s a very comfortable restaurant with a really lovely vibe. The walls of the restaurant are adorned with photos of the historic town and county. Before we were about to ask for the bill, Mick and Tom both presented us with a beautifully decorated surprise dessert, a mixed berry Eton Mess. So much for being stuffed, we devoured it. 


This was an extremely lovely visit to Stockhouse Restaurant and very good value for money with two courses on the early bird for €21.95 and the cocktail specials starting from €8.95. For €83.20 excluding tip it was well worth it. Thank you to Tom & Mick and all the staff for a wonderful experience we really enjoyed it and are already planning a return visit.

Our day didn’t stop there, it would’ve been rude to be in Trim and not stop in to see Rodney in The Malthouse for a few beers. “We’ll stay till the 16.50 bus” ha yeah right, why stop there when you’re having fun. A few beers, laughs and a taxi home later that night saw the end to a fantastic day.

Beer & Food Pairing Night at Bru Brewery

When I saw this event advertised a few weeks ago I just knew I had to go. As part of the Boyne Valley Food Series, this night was a great opportunity for local food producers to showcase their products in a unique way. Many actually used the Brú beers in their treats for customers to try.

On the night itself it was a dreary wet evening, but that awful weather didn’t dampen the spirits of Paddy & Dáire, the owners of Brú Brewery. They were in flying form greeting everybody and pouring their delicious beers. On tap was their amazing Stout Dubh & their IPA Rí. Later in the evening, much to my delight, their red ale Rua was flowing beautifully. Neil from Boyne Valley Cider brought along bottles too.

As a very last minute decision, I baked up two different batches of chocolate brownies to take along with me. I had no intention of standing at a stall to hand them out to the unsuspecting crowd. But brewer Dave had other ideas. The first batch had to be the double chocolate porter brownies (thanks to the book Sláinte for the recipe) that I make for nearly every event I attend. I used Brú’s stout Dubh, mint & dark chocolate in this batch. For the second lot, again I used Dubh, a slightly different recipe. This batch didn’t have milk or eggs. But they were covered in chocolate frosting. Both of which seemed to go down quite well.

While I was busy at my wee table, Wayne was off sampling the wares of the producers. Straight away he hit up Copper & Spices for their simple yet tasty chicken curry with rice. I was lucky he brought me a bowl, this flew out real quick! I enjoyed it with a nice cold glass of Brú Rí while Wayne enjoyed the Dubh.

Newgrange gold, who are based in Slane, were there with their beautiful Irish seed oils. They actually used some of the hops used by Brú to create their oh so tasty Citra Hop Rapeseed oil & a once off mayonnaise. Another interesting oil was the smokey rapeseed oil. Both of which I’m delighted to admit were only gorgeous. Especially when I dipped some of the homemade brown bread using spent grains baked by lilyphils foods. I did notice bowls of salad, for the more health conscious of us, and people using the oils as dressing. For this I went with another glass of Rí.

Next up for me,was the highlight of my night. Sausages infused with Brú Rua and black pudding made with Dubh, from The Whole Hoggs. Also from Slane, they rear a breed of pig called the irish grazer and specialize in traditional pork products such as salami. But for the event the created these products that were spectacular. Cooked expertly on the BBQ by Pam, mother to Dáire. Pam was only too delighted to tell me my brownies were worth every Syn.

While nibbling away on our BBQ treats, I noticed a stand of marinades. These were cleverly put together by the man behind Inistioge food, based in Kilkenny. They make marinades & dry rubs using craft beers! Instantly had my attention. For the event they brought a beef marinade made with Brú Dubh. We were given a sample pack to bring home. But he had some to try and suggested putting it on top of the sausages & black pudding. Any excuse for seconds, i was off. It was gorgeous, really tasty and took it to a whole new level. Thought it would’ve been greedy to go for thirds. At this point I discovered Brú Rua was pouring. Perfect with the sausages we thought.

Last but not least was dessert. I was thrilled to see it was What’s For Pudding supplying it. They are only around the corner in Kilmessan. I met them for the first time at an event last year and fell in love with their sticky toffee pudding. So it was only fitting I ended my night with a sampling of this. They also make a chocolate pudding which is yummy with fresh cream, which they had on hand. But then out of the corner of my eye sat a sampling of their lemon blueberry pudding. Oh dear god, this was fabulous and is now my favourite. What’s for pudding is available locally so it’ll be easy to stock up!

Throughout the duration of the event there was a local singer entertaining us with some great tunes. For an entry of €15 in, it was great value for a great evening. Well done to all concerned and check out the Boyne Valley Food Series website, and twitter feed for info on their upcoming events.

My Best Irish Beer 2014 – 8 Degrees Full Irish – a full on hop forward pale ale – deliciously drinkable. Honourable mentions to Bo Bristle Imp Red and their Double IPA

Best Uk / International Beer: Brewdog – Black Eyed King Imp what a great dark beer, barrel aged version of Cocoa Psycho essentially – as mad as it sounds, and tastes amazing. Honourable mentions to Gamma Ray and Black Betty by Beavertown, and Magic Rock – Cannon Ball

Best Pub – This year, for me Farringtons  The Norseman, have stepped it up a gear – not only do they have a huge range of craft with macro to keep everyone happy they do nice food and have a massive whiskey selection – the new website really sends them over the top. Honourable mentions – Brewdock (aka my 2nd Home) Smyth’s on the Square Navan, The Oarsman Carrick on Shannon, and PJ Kavanagh’s Portlaoise.

It was four days, 200 different beers, numerous festival specials and great food.
